Today's post is brought to you by my lovely friend, Skye. Nothing short of a 'foodie' she is a whizz in the kitchen and rates cooking/baking as one of her favourite pastimes. Skye is a bit of health nut like me so of course, in keeping with my bloggy this Power Slice recipe is guilt free, plus dairy, sugar, wheat and egg free. This is really simple to make, doesn't require baking and great for snacks. This is how it is done.
Ingredients
(mostly bought at local good health food shop)
1 cup each: brazil, almonds, macadamias.
1 cup each: dried figs, apricots, cranberries
a handful of dates.
2 tablespoons each: carob powder, cocoa powder, macca powder.
¼ cup dark agave syrup
about 2 tbs cocoa butter. melted
teaspoon vanilla extract
pinch of salt.
Method
1. Add brazil, almonds and macadamia nuts to food processor/thermomix and blend until almost finely ground.
2. Add dates, apricots, figs and cranberries. Blend. (I didn’t have much dried fruit left so I added some sultanas.
3.Add carob, cocoa and macca powders and blend.
4. Then add agave syrup, vanilla and salt. Blend
At this stage, there are many options
6. Melt cocoa butter, then add more agave syrup, and powders, stir until combined.
7. Press out nut and fruit mix on to a sheet of baking paper either by rolling or pressing it out to about 1 cm thick. Pour over sauce and then roll into a log and refrigerate.
8. Make into a slice (which is what I did today).
With the slice and the roll, I didn’t add any powders to the sauce, just melted the cocoa butter. It can get quite sweet, so keep tasting it as you go and adjust to your liking.
