Low fat turkey + salad wraps

There are quite a few meals that get a good turn over in our house on a weekly basis.  They do vary with how and what they are served with but generally these three meaty 'superfoods' make it into our weekly shopping trolley.

1. Kangaroo meat - (low in fat, high in protein, packed with vitamins and minerals and funnily enough the roo's don't produce methane gas so great for the environment)

2. Salmon steaks  - high in omega-3's which helps protect us against inflammation, cardiovascular health and great skin and hair health.

3. Turkey meat - great source of protein, chock full of essential vitamins and minerals, low in saturated fat and really versatile.

It was a strange coincidence that the lovely folk at Steggles contacted me to see if I would like to try some of their new Turkey Shortcuts range.  I am already a sold convert but they sent me some (thanks Nigel for dropping it off) anyway.  Perhaps they have some hidden cameras in the supermarket and I rated as one of their top purchasers;)

Now, turkey is not just for Christmas lunch but it comes in some great easy to prepare meals - burger patties, mince, roasts, breast steaks.  It is a great alternative to other white meats but lower in fat (if you remove the skin).

We have approximately enough turkey to last us til next year, and quite possibly the year after that (wanna come over for a BBQ?) so if you follow me on twitter, facebook or intagram I will be sharing some creative ways to serve it up.

Anyways, after a busy weekend and not much motivation to cook a complicated meal, I pulled out some turkey mince from the freezer and we made turkey wraps.


They are perfect for a Summer time meal and the kids love getting their hands dirty and making their own.

Ingredients

+ 500gm Steggles turkey mince
+ 1 packet tortilla wraps (found in bakery or mexican isle)
+ chopped up lettuce and tomato
+ grated cheese and carrot
+ 1 avocado
+ 1/2 can tomato soup

How to make

+ brown the turkey mince in a pan, let the meat sizzle for a while to burn off any excess fat
+ add the tomato soup and simmer until thickens
+ put all your ingredients on the table
+ start by smothering some avocado over the middle of the wrap, then add the chicken and salad ingredients.
+ wrap foil around the base so the kids don't loose their filling
* I wrap mine in a nori seaweed roll, it has less carbs and is gluten free.
