A healthy berry & macadamia tart
When it comes to Christmas time, my family doesn't really have any traditions.. Sure, we put up the tree on December 1st and open presents Christmas morning but that's about where it stops.
It's a very casual affair, who ever hosts the day and the top priority is for it to be stressfree and relaxed. Summer salads and pavlova are favourites and take preference over roasts and puddings.
It is fun to try out new festive dishes and one that caught my eye came through in an email from my local health food shop. BONUS!
This berry and macadamia tart is a refreshing change to a cake and I think it falls into the light dessert category (is that what a tart is?). I have modified it slightly to reduce sugar and replace butter with yoghurt.
This is how you make this scrumptious didley uptious tart
INGREDIENTS
+ 1/2 cup plain flour (or gluten free or spelt)
+ 1 cup of almond or hazel meal
+ 1 cup coconut palm sugar or rapadura sugar ( I just used 1/2 cup brown sugar)
+ 6 egg whites
+ 180 gm melted butter ( I used 180 gm greek yoghurt instead)
+ 1 cup raw macadamias
+ 1 cup mixed berries
HOW TO MAKE
+ pre heat oven to 160 degrees
+ place flour, almond meal and sugar in a bowl and combine
+ make a well in the centre, add the egg whites and yoghurt and stir to combine
+ spoon mixture into a 22cm lightly greased round spring form pan
+ sprinkle with the berries and macadamias and bake for approx 1 hour
+ Cool on a wire rack
+ serve with greek yoghurt or ice cream and more berries.
